SOY BEANS


Soybeans:
Small round shape, yellow in color, white lilum (edible type).

History:
Farmers in China grew soybeans some 5,000 years ago.
The first soybean were brought to the U .S. on a Yankee clipper in 1804. In 1829, U .S. farmers first began growing soybeans, then during the Civil Wai; soybeans were used as coffee berries to brew "coffee" when real coffee was scarce.
In the late 1800s, U.S. Farmers began growing soybeans for cattle feed Just after the turn of the century, in 1904, George Washington Carver began studying the soybean at the Tuskegee Institute in Alabama. People no longer thought of the soybean as just a feed crop, but also as a source of protein and oil.

SOY BE AN VEGETABLE SOUP

1/2 cxip cooked fresh soybeans, divided
2 cup chicken bouillon, divided
2/3 diced carrots
1/2 cxip diced eeleiy
1/2 teaspoon dehydrated onion flakes
1 /4 m e dum p epper, ci c e d
dash basil
dash thyme
1/4 cxip evaporated skimmed milk
salt and pepper to taste
Place half the soybeans and bouillon in blender container; pro cess until mixture is liquefield. Pom
into a saucepan; add carrots, celery, onion flakes, green pepper and remaining bouillon. Bring to boil; add basil and thyme. Simmer for' 20 minutes or utitil carrots are tender. Acklmilk and remaining soybeans; reheat. Season to taste. Makes 1 serving
SOYBEAN CUTLETS WITH TOMATO SAUCE:
8 OZ(8*28,35 $ cooked died soybeans
1/4 cxip cooked, finely chopped mushrooms
1/4 cxip finely chopped celery
1/2 packet instant chicken broth and seasoning mix
1 teaspoon dehydrated onion flakes
1/4 gailic clove, crushed
1 teaspoon Worcestershire
1 t e aspo on clioppe d fre sh p ar si ey
1/2 cxip tomato pxiree
salt and paper to taste
1/4 bay leaf
Pxuee beans in blender container, pxishing down with rxfober spatxila as needed. Transfer to mixing bowl.Addmxishroom, celery, broth mix, onion flakes, garlic, Wore ester shire, parsley and sufficient tomato pxa'ee to moisten. Season to taste. Shape into 2 patties. Bake at 375F 20 m in in non-stick pan Place bay leaf and remaining tomato puree in saxicepan and simmer to blendflavoxiis; season and seive Cxitlets.
CHICK PEA, SOYA. OAT PATTIES:
1 cup soybeans
1 /2 brazil nxtfs
1 tbs polyunsatxtt ated oil
1&1/2 cxip water
1  cup rolled oats
2  cups Click Peas 3-4 cloves gailic
1 tbs Basil leaves
1 medixun onion clioppe d
Soak soya beans and click peas overnight. Place in blender with the garlic, brazil nuts, onion, water, and basil. Blend until a fine consistency. Stir into tlis mixture the cxip of rolled oats and leave to stand for 15-20 min. Drop by onto a lightly oiledfrypan oiled on medium heat. Cook approx. 10 mill on each side until browned. Sauce:
2 onions, finely chopped, basil and salt, if desired Simmer xaitil tomatoes break xip. Alternatively, puree all in a bender and heat slowly. Simmer 15-20 min. Seive patties with saxice and vegetables or salad
Baked Soybeans with Chutney :
1     cup     soybeans     dried
1/3     cup     chutney     minced
6     ounces     tomato paste    
1 1/2     teaspoons     dry mustard    
1 1/2     cups     liquid from beans    
20     small     boiling onions     peeled
3     tablespoons     molasses    
Wash the dry beans carefully and soak overnight in salted water. Add more
water if necessary and cook for 3 to 4 hours, or until beans are tender.
Drain, reserving 1 1/2 cups of the cooking liquid.
Combine the chutney, tomato paste, and mustard, and mix well. Add the beans,
onions, molasses, and the cooking liquid, and simmer in a pot until the sauce
is slightly thickened. Pour it all into a casserole or bean pot; cover and
bake for 1 to 1-1/2 hours in a 325°F oven.
Serve hot.
Makes 4 servings.
NOTE: "The chutney gives a spicy flavor that is quite strong; if you prefer
rather sweet baked beans, add a little more molasses or mango chutney for the best flavor.

Soynuts
1     cup     dried soybeans    
1     quart     cold water    
1/2     teaspoon     salt    
        cooking spray    
Makes 2 1/2 cups
Rinse beans thoroughly. Soak overnight in refrigerator, or 3 -4 hours on the
counter. Drain, and pat dry.
Preheat oven to 350F. Spray a baking sheet with cooking spray. Place beans in a
single layer on the baking sheet. Bake for 35 to 45 minutes, stirring often,
until well browned. Remove from oven and salt or season to taste.
If you want to serve them hot, reheat at 325F.
